Beef Rendang 牛肉仁当

 Rendang讲要煮很久了,
大概是去年Raya到现在,
终于煮出来了,第一次就成功,
说真的不难啦。
首先把一下的材料用食物搅拌机搅成paste。

Blend搅拌机拌混合 :
(只有辣椒成份减少)
30 Shallot 红葱
10 Garlic 蒜
100g Dry Chili 干辣椒
(我用40g,喜欢辣不用减)
4 Candlenuts
2inch Ginger 姜
2inch Turmeric 黄姜
1tbsp Salt 盐(我没放)
1tbsp Coriander Seeds 
炒椰丝 Kerisik
椰奶用1粒老椰挤出来,杂货店可买到,
挤完椰奶后,
椰丝放入锅里干炒至金黄色就成Kerisik。
Beef Rendang 牛肉仁当材料:
1kg Beef, cubes 牛肉切小块
300ml Fresh Coconut Milk 新鲜椰奶
2L Water 
4 Lime Leaves 枫杆叶,切丝
4 Lemongrass, bruised 香茅,白色部份拍烂
2inch Galangal 蓝姜
2 Assam Keping 阿叁皮
4tbsp Oil 油
6-8tbsp Kerisik(Toast Coconut) 椰丝
 锅里加入油+搅拌好的辣椒炒香+牛肉炒+椰奶+水+Lime leaves + 香茅 + Galangal + Assam = 用小火慢慢焖煮至牛肉软、酱汁浓稠,
最后加Kerisik就可以上桌,
如果要酱汁的话,kerisik可以减少,
我自加brown sugar,
比较喜欢吃带有甜味的rendang。
第二天给老公带Rendang饭盒
